Weird name, but great vegetarian sandwich! And once you learn how to quickly and easily chop up your cabbage and avocado (find the links at the bottom of the article about Cutting Corners.), preparing this summer time lunch will be a snap.
Crunchy Bible Sandwich
1/2 head cabbage, chopped
1 avocado, chopped
1/2 cup sunflower seeds
2 Tbsp. sesame seeds
1/4 cup mayonnaise
1/2 tsp. Mrs. Dash seasoning
12 whole wheat pita pockets (or 6 whole wheat pitas cut in half)
Toss cabbage, avocado, sunflower seeds, and sesame seeds in a bowl. In a small mixing bowl, combine mayonnaise, Mrs. Dash, and cayenne. Pour dressing over vegetables and mix until well coated. Stuff mixture in pita pockets and serve.
NOTE: We use Spectrum mayonnaise which uses expeller pressed canola oil rather than partially hydrogenated and/or GMO oils found in most prepared mayonnaise. This can be found at Natural Grocers or other health food stores.
