Banana Bread or Muffins

1/3 cup butter or coconut oil,1/2 cup sucanat, 1 egg, 2 cups white wheat flour, 1 1/2 tsp. baking powder, 1/2 tsp. baking soda, 2 ripe bananas mashed, 1/2 cup almond milk, 1 tsp. vanilla, 1/2 cup chopped walnuts (optional). 


Preheat oven to 350 degrees. Cream the butter or oil, sugar, and egg. Stir in flour, baking powder, and baking soda. Add remaining ingredients and mix well. Bake 50 minutes in bread pan for bread or 35 minutes in muffin tin for muffins.
